Goûte-Boudin The Brotherhood of the Knights of the Black Pudding was created in 1863. The aim of the Brotherhood mostly consists of “promoting the products of the Perche, quantifying the vast variety of French black puddings, preserving or giving a new life to manufacturing processes in the region but also in any French province, to encourage the pursuit of quality for this economical delicacy by having annual competitions, maintaining contact with different gourmet associations and finally, to reinforce between members of the Brotherhood feelings of comradeship, support, honour and selflessness”.
